Cherry Barbecued Pork Tenderloin Tails
 
2 pounds pork tenderloin tips
1 cup cherry barbecue sauce
1/4 teaspoon salt
1/4 teaspoon freshly ground black peppe

 

1. Preheat the oven to 350 degrees.
 
2. Toss the meat with the sauce to coat and sprinkle with salt and pepper. Arrange in a single even layer on a baking sheet.
 
3. Roast for 10-12 minutes or until the pork is just cooked through. Chill to 40 degrees.
 
4. Slice the pieces of chilled pork very thinly

Chipotle Cherry BBQ Sauce
 
1/2 cup cherry barbecue sauce
2 tablespoons mayonnaise
2 ounces dried cherries
1 teaspoon minced chipotle pepper
1/4 teaspoon salt
1/4 teaspoon freshly ground black pepper

1. Combine all ingredients in a small bowl and whisk together to combine thoroughly.
